Are you familiar with the famous painter Bob Ross? His T.V. episodes have been viewed millions of times, several of those by our family. We love that it is informative and relaxing at the same time. When he makes a mistake while painting, he’ll say, “that’s a happy little accident” meaning, “I didn’t intend to do that, but I’ll make it a positive addition to the artwork.” Well, this recipe was discovered by being a happy little accident in the kitchen. It wasn’t what we were intending to make but it ended up being so much better than what we were hoping to make!
My third daughter, Abby, has some recipes that she really knows how to rock in the kitchen. Low-Carb Garlic Cheese Crisps is now one of them.
We served our new recipe with our Vegetable Chicken Soup and they have been wonderful with many other dishes. They’re really the perfect addition to any soup or salad meal. In fact, they are my new go-to the CARE & SHARE meals. CARE & SHARE meals are a separate blog post about a simple plan that I put in place to have meals that I can take to a friend in need in almost a moments notice.
This yummy side dish takes just five minutes to mix, five more to drop on cookie sheets, and 13 to bake! I keep most recipes as simple as possible. We’re busy moms so there’s seldom time to be a gourmet! Don’t get me wrong,I love to cook and do make some elaborate dishes once in a while, but for my routine menu, there’s no room for complex.
Speaking of simple, just in case you don’t already do this, I want to tell you about parchment paper (not the same as wax paper). Parchment paper should be on my list of most favorite things for moms because it was a game-changer for me! It’s great for three reasons:
- Nothing sticks to it. At least I haven’t found anything that does.
- Clean up is a breeze. No more scrubbing cookie sheets!
- If your pans are aluminum, like mine are, it keeps the unhealthy metal away from your food. Aluminum is great for baking food evenly and being a durable pan, but studies show it to be a dangerous item to touch your food. Parchment paper is the solution! RECIPE Mix all the following together, shape into balls on a cookie sheet, bake at 350 degrees for 11-14 minutes or til brown and slightly crisp. 2 Cups Shredded Cheddar
1 cup Almond Flour (be careful not to use almond meal which is too course for this recipe. We also didn’t care for coconut flour)
4 Tbsp Butter
1 tsp Garlic Powder
1/2 tsp Salt
Optional: Jalapenos, Chopped Ham or Bacon, Ranch dressing for dipping
Change it up: It’s also good with Italian seasoning and mozzarella as a substitute for the cheddar cheese, and dipping it in marinara sauce
